Shrimp paste is a type of condiments with high nutritional value. However, the flavors of shrimp paste, particularly the non-uniformity flavors, have limited its application in food processing. In order to identify the characteristic flavor compounds in Chinese traditional shrimp pastes, five kinds of typical commercial products were evaluated in this study. The differences in the volatile composition of the five products were investigated. Solid phase micro-extraction method was employed to extract the volatile compounds. GC-MS and electronic nose were applied to identify the compounds, and the data were analyzed using principal component analysis (PCA). A total of 62 volatile compounds were identified, including 8 alcohols, 7 aldehydes, 3 ketones, 7 ethers, 7 acids, 3 esters, 6 hydrocarbons, 12 pyrazines, 2 phenols, and 7 other compounds. The typical volatile compounds contributing to the flavor of shrimp paste were found as follows: dimethyl disulfide, dimethyl tetrasulfide, dimethyl trisulfide, 2, 3, 5-trimethyl-6-ethyl pyrazine, ethyl-2, 5-dimethyl-pyrazine, phenol and indole. Propanoic acid, butanoic acid, furans, and 2-hydroxy-3-pentanone caused unpleasant odors, such as pungent and rancid odors. Principal component analysis showed that the content of volatile compounds varied depending on the processing conditions and shrimp species. These results indicated that the combinations of multiple analysis and identification methods could make up the limitations of a single method, enhance the accuracy of identification, and provide useful information for sensory research and product development.  相似文献

Gonadotropin-releasing hormone(GnRH) is a crucial peptide for the regulation of reproduction.Using immunological techniques,we investigated the presence of GnRH in horseshoe crab Tachypleus tridentatus.Octopus GnRH-like immunoreactivity,tunicate GnRH-like immunoreactivity,and lamprey GnRH-like immunoreactivity were detected in the neurons and fibers of the protocerebrum.However,no mammal GnRH-like immunoreactivity or lamprey GnRH-Ш-like immunoreactivity was observed.Our results suggest that a GnRH-like factor,an ancient peptide,existed in the brain of T.tridentatus and may be involved in the reproductive endocrine system.  相似文献

Phospholipids are used to improve the growth and survival of Portunus trituberculatus,a widely cultured crab species in China.However,only total phospholipids or several classes are applied in crab diets.In this study,we employed a targeted lipidomic method to investigate the comprehensive phospholipid composition in P.trituberculatus larvae and reveal the changing phospholipid profile over the larval development.Results showed that P.trituberculatus larvae contain 112 phospholipid species belonging to 10 phospholipid classes,in which phosphatidylcholine(PC)and phosphatidylethanolamine(PE)species are the most abundant,and PC,PE,phosphatidic acid,and phosphatidylserine(PS)are with high concentrations.The levels of all phospholipids significantly changed with larval development,which was highlighted by the downward parabolic changes in PE,phosphatidylglycerol,phosphatidylino-sitol,PS,lysophosphatidic acid,and sphingomyelin levels.In addition,nearly all phospholipid species were depleted at the M stage,which probably contributed to the mass mortality of crab larvae.These findings on the composition and alterations of phospholipids in P.trituberculatus larvae provide novel perspectives for the targeted supplementation of phospholipids in crab diets.Our work also highlights the use of targeted UHPLC-MS lipidomics in understanding the changes of phospholipids during crab development.  相似文献

Codfish is a kind of abyssal fish species with a great value in food industry. However, the flavor of codfish, especially the unpleasant odor, has caused serious problems in its processing. To accurately identify the volatile compounds in codfish, a combination of solid phase micro-extraction(SPME) method and simultaneous distillation extraction(SDE) method was used to extract the volatiles. Gas chromatography-mass spectrometry(GC-MS) along with Kovats indices(KI) and authentic standard compounds were used to identify the volatiles. The results showed that a total of 86 volatile compounds were identified in codfish, of them 24 were extracted by SDE, 69 compounds by SPME, and 10 compounds by both SDE and SPME. Seventy volatile compounds were found to have specific odors, of them 7 typical compounds contributed significantly to the flavor of codfish. Alcohols(i.e.,(E)-2-penten-1-ol and 2-octanol), esters(i.e., ethyl butyrate and methyl geranate), aldehydes(i.e., 2-dodecenal and pentadecanal) contributed the most to fresh flavor while nitrogen compounds, sulphur compounds, furans, as well as some ketones(i.e., 2-hydroxy-3-pentanone) brought unpleasant odor, such as fishy and earthy odor. It was indicated that the combination of multiple extraction methods and GC-MS analysis can enhance the accuracy of identification, and provide a reference for the further study on flavor of aquatic products.  相似文献

We evaluated the effects of supplemental coated and crystalline methionine (Met) on the growth performance and feed utilization of juvenile cobia (Rachycentron canadum Linnaeus) in a 60-d feeding trial. Fish groups were fed one of six isonitrogenous and isolipidic diets: 1) fishmeal control; 2) un- supplemented experimental (low-fish-meal diet deficient in Met); or 3) one of four Met diets supplemented with crystalline L-Met, cellulose-acetate-phthalate coated L-Met, acrylic-resin coated L-Met, or tripalmitin- polyvinyl alcohol coated L-Met. The test diets were fed to triplicate groups of cobia (initial body weight 5.40-4-0.07 g) twice a day. The weight gain and specific growth rate of the fish fed the RES diet were highest among the Met-supplemented groups and were 23.64% and 7.99%, respectively, higher than those of the fish fed with the un-supplemented experimental diet (P〈0.05). The protein efficiency ratio of the fish fed the MET diet was significantly higher than that of the fish fed the un-supplemented experimental diet and the fish in the other methionine supplementation groups (P〈0.05). Our results suggest that supplementation of crystalline Met in low-fish-meal diets promotes the growth performance of juvenile cobia.  相似文献

In the present study, genetic polymorphism and diversity in unicellular clones of Chlorella vulgaris Beijerinck and Chlorella pyrenoidosa Chick were studied with Inter Simple Sequence Repeats PCR (ISSR PCR). Samples including four clones of C. vulgaris and three clones of C. pyrenoidosa were purified by single-clone-choice method. For four C. vulgaris unicellular clones, the total number of the bands scored for 18 primers was 298; and the number of the polymorphic bands was 118, of which 39.6% were polymorphic. The size of PCR products ranged from 200 to 2 500 bp. The total number of bands scored for 18 primers, the number of polymorphic bands and the percentage of three C. pyrenoidosa unicellular clones was 194.83 and 30.8%, respectively. POPGENE analysis show that the average Nei genetic diversity (h *) and Shannon index of diversity (I *) in the four C. vulgaris unicellular clones was 0.2181 and 0.3208, respectively, which is slightly higher than those of the three C. pyrenoidosa unicellular clones (0.190 3 and 0.274 8), which agreed with the percentage of polymorphic bands in the mixed samples of the two species. The results suggest that ISSR is a useful method to Chlorella for intra-species genetic analysis.  相似文献

Interleukin-17(IL-17), a prototype member of IL-17 family, plays an important role in defending against extracellular pathogens as a pro-inflammatory cytokine. The function and distribution of IL-17 have been extensively studied in many vertebrates. However, few study has focused on the role of IL-17 in invertebrates, especially in mollusks. In this study, an IL-17 homolog was identified in Octopus ocellatus, which was designated as OoIL-17. The phylogenetic analysis showed that OoIL-17 is clustered well with other invertebrate IL-17, indicating it is highly similar with the IL-17 of other invertebrates. The expression of OoIL-17 gene was analyzed with qRT-PCR in a variety of healthy tissues and the hemocytes infected with Vibro anguillarum or Micrococcus luteus. The mRNA of OoIL-17 gene is constitutively expressed at different levels in all examined tissues of healthy O. ocellatus, including mantle, stomach, hemocytes, muscle, gonad, hepatopancreas, systemic heart and gill. The lowest expression was observed in mantle while the highest was observed in hepatopancreas. The expression level of OoIL-17 gene is significantly up-regulated in O. ocellatus hemocytes upon infection with V. anguillarum and M. luteus, indicating its active involvement in the host immune response against bacterial pathogens. The results laid the foundation for further understanding the innate immune mechanisms of IL-17 in O. ocellatus and mollusks.  相似文献

研究了配合饵料、轮虫、蛋黄、轮虫+人工配合饵料(3~12日龄投喂轮虫,13日龄起投喂配合饵料)等4种开口饵料对奥尼罗非鱼仔鱼生长、发育和存活影响。结果表明,1)投喂不同饵料对奥尼罗非鱼仔鱼生长具有显著影响(P<0.05),轮虫+配合饵料组生长较快,绝对增重率和特定增重率分别为0.011g/d和17.18%d-1;蛋黄组生长最慢,绝对增重率和特定增重率与其他各组差异显著(P<0.05)。2)轮虫+配合饵料与轮虫组的仔鱼成活率较高,分别为90.3%和89.7%,2组差异不显著(P>0.05),且仔鱼发育较好,大部分个体进入稚鱼阶段;蛋黄组成活率最低,只有40.7%,个体发育较为缓慢,与其他各组差异显著(P<0.05)。可见,投喂鲜活的天然饵料(轮虫)+配合饵料是罗非鱼苗种培育的最佳开口饵料。  相似文献

A crude protease produced from Planomicrobium sp. L-2 is described, and its effectiveness as an additive in liquid detergent evaluated. We isolate the protease-producing Planomicrobium sp. L-2 from the gastrointestinal tract of Octopus variabilis. At least three caseinolytic protease clear bands were observed in zymogram analysis. The crude alkaline protease was highly tolerant of a pH range from 7.0 to 9.0, and temperatures to 50°C after incubation for 1 h. Proteolytic enzymes were stable towards three surfactants (5% Tween 80, 1% Triton X-100 and 0.05% SDS) and an oxidizing agent (1% hydrogen peroxide), in addition to being highly stable and compatible with popular commercial laundry powered detergent brands available in China. Our study demonstrates the potential these proteases have for development into novel classes of detergent additive. This study also suggests that the gastrointestinal tract of Octopus variabilis may be a rich source of commercially valuable strains of enzyme.  相似文献

选取1 日龄乌鬃鹅300 只,随机分成5 组,对照组(A)用基础饲粮饲养,实验组B~E 组分别在基础饲粮中添加质量分数1%(B 组)、2%(C 组)、3%(D 组)、4%(E 组)的螺旋藻,实验期63 d.结果表明:与对照组相比,添加螺旋藻对乌鬃鹅的屠宰率、半净膛率、腹脂率和肌肉灰分无显著影响(P〉0.05),对其它生长指标和全净膛率均有显著性影响(P〈0.05),其中2%C 组和3% D 组的料重比显著下降(P〈0.05), E 组全净膛率显著提高(P〈0.05);肌肉的粗蛋白质(CP)含量E〉D〉C〉B〉A,粗脂肪(EE)含量E〉A〉B〉C〉D;所测得的17 种氨基酸中,包括含有人体必需的7 种氨基酸(EAA)和2 种半必需氨基酸(HEAA);氨基酸评分(AAS)和化学评分(CS)最高的是赖氨酸(Lys),实验组的必需氨基酸指数(EAAI)均比对照组有所提高.添加2%~3%(w)的螺旋藻对生长性能有显著差异(P〈0.05),对粗脂肪、粗蛋白的含量有所改善;从肌肉EAAI 来看,添加螺旋藻后的肌肉蛋白质品质优于不添加螺旋藻的对照组.建议饲粮中螺旋藻的添加量为质量分数2%.  相似文献

Fatty acids(FAs) in sediment collected from three different stations in the Yellow Sea and the East China Sea were analyzed for their distributions and to determine evidence of harmful algal blooms in the sediment core.Less diverse FAs were found in the Yellow Sea(YS) station,whereas in the two stations of the East China Sea(ECS) the FAs were more diverse.Concentrations of some FA species in the two ECS stations displayed an occasional surge in their vertical profile.The highest concentration of FAs was found in the surface layer of station QT3(43.28 μg g~(-1)).Monounsaturated FAs were more susceptible to degradation compared to their saturated counterparts,and changes of 16:0,18:2 and 20:5 accounted for the most variability in total concentrations of FAs as those species made up most of the quantified FAs.The origins of the major fraction of FAs were attributed to autotrophic sources,and bacterial FAs accounted for only a small fraction of the total FAs in the region.Nutrient availability was a possible regulating factor controlling bacteria abundances in marine sediments in the ECS and the YS.A principal component analysis(PCA) was applied to analyze the FA dataset and to reveal the principal environmental factors that control the composition of FAs in the sediments.PC2,which explains 15% of the variance,was estimated to reflect the diagenetic effects on the FA compositional changes in sediments influenced by bacterial degradation.  相似文献

Cephalopods play key roles in global marine ecosystems as both predators and preys. Regressive estimation of original size and weight of cephalopod from beak measurements is a powerful tool of interrogating the feeding ecology of predators at higher trophic levels. In this study, regressive relationships among beak measurements and body length and weight were determined for an octopus species (Octopus variabilis), an important endemic cephalopod species in the northwest Pacific Ocean. A total of 193 individuals (63 males and 130 females) were collected at a monthly interval from Jiaozhou Bay, China. Regressive relationships among 6 beak measurements (upper hood length, UHL; upper crest length, UCL; lower hood length, LHL; lower crest length, LCL; and upper and lower beak weights) and mantle length (ML), total length (TL) and body weight (W) were determined. Results showed that the relationships between beak size and TL and beak size and ML were linearly regressive, while those between beak size and W fitted a power function model. LHL and UCL were the most useful measurements for estimating the size and biomass of O. variabilis. The relationships among beak measurements and body length (either ML or TL) were not significantly different between two sexes; while those among several beak measurements (UHL, LHL and LBW) and body weight (W) were sexually different. Since male individuals of this species have a slightly greater body weight distribution than female individuals, the body weight was not an appropriate measurement for estimating size and biomass, especially when the sex of individuals in the stomachs of predators was unknown. These relationships provided essential information for future use in size and biomass estimation of O. variabilis, as well as the estimation of predator/prey size ratios in the diet of top predators.  相似文献

To study the changes of volatile compounds and antioxidant activity of fast fermented shrimp head paste during the fermentation processing,Penaeus vannamei boone head was used as the raw material,and compound starter was added for fermen-tation.During the 14 days of fermentation,the changes of free amino acids,volatile flavor compounds and main components were determined by SPME-GC-MS and electronic nose.The oxidation-resistance changes of water extract at different fermentation stages were evaluated.The results showed that the total free amino acids increased from original 2320 to 5640 mg(100 mL)?1.SPME-GC-MS analysis found that aldehydes,pyrazine compounds increased from 10.80%,1.94%to 24.35%,13.63%respectively during the fermentation process.The HO·scavenging ability of shrimp head paste increased from 52%to 86%.Our results showed that the shrimp paste produced from shrimp head fermentation could obtain good flavor and possess certain antioxidant activity of aquatic fermented condiment.  相似文献

研究了大豆浓缩蛋白作为饵料蛋白源对中华绒螯蟹幼蟹消化酶活力的影响,初步探讨了中华绒螯蟹对饵料蛋白源的内在适应机理。根据中华绒螯蟹的营养需求,用大豆浓缩蛋白替代鱼粉作为蛋白源配制成6种近似等蛋白等能的饵料,其中大豆浓缩蛋白在饵料中的含量分别为0、11%、22%、33%、44%和56%(分别替代鱼蛋白质量的0、18.64%、37.93%、56.90%、77.19%和100%),对照饵料全部以鱼粉作为蛋白源。用上述6种饵料喂养中华绒螯蟹50 d后,测定蟹肝胰腺各种消化酶活力。结果表明:随着饵料中大豆浓缩蛋白含量的升高,胃蛋白酶和胰蛋白酶活力均呈降低之势。当大豆浓缩蛋白含量达到44%时,与全鱼粉对照组相比,胃蛋白酶和胰蛋白酶活力显著性降低(P<0.05);同时,淀粉酶稍呈升高之势,而纤维素酶则稍呈降低的趋势;A/T比例呈显著上升的趋势,当大豆浓缩蛋白含量达44%时,与对照组有显著性差异,说明河蟹对植物蛋白有很强的适应性。  相似文献

The present study was conducted to evaluate the feasibility of replacing fish meal (FM) with bioactive peptides (BPs) in diet of white shrimp (Litopenaeus vannamei). The changes in growth performance, body composition, non-specific immunity, and water quality were examined after the shrimp were fed four diets, in which 0% (control), 33.3%, 66.7% and 100% of FM was replaced by BPs, respectively. The groups were designated as Con, 1/3BPs, 2/3BPs, and 3/3BPs. A total of 720 shrimp with an initial body weight of 1.46 ± 0.78 g were fed the experimental diets for 56 days. The results revealed that: 1) the weight gain rate (WGR) in 1/3BPs, 2/3BPs, and 3/3BPs was significantly higher than that in Con (P < 0.05), while no significant difference was found on survival rate and feed conversion ratio (FCR); 2) the whole-body crude protein (CP) and crude lipids (CL) were significantly different among groups, while there was no significant difference between crude ash and phosphorus contents; 3) the levels of acid phosphatase (ACP), lysozyme (LZM), superoxide dismutase (SOD), phenol oxidase (PO) and bactericidal activity increased significantly with the inclusion of BPs; 4) in terms of water quality, no significant difference was found in pH and dissolved oxygen among diets during the whole experimental period. Moreover, even though nitrite and ammonium levels tended to increase with time, there was no significant difference among groups. The results indicated that BPs is an applicable alternative of protein source, which can substitute FM in the diets of L. vannamei; it is able to effectively promote growth performance and improve immunity. Moreover, BPs in the diets had no negative impact on water quality.  相似文献

Morphology of the spermatozoon of Octopus ocellatus was studied by light, scanning electron, and transmission electron microscopes. Sperm are 600–700 μm long, with a large number of granules in diameter about 130 nm. Each spermatozoon is composed of a head, neck, and tail. The head is made up of an acrosomal complex anterior to the nucleus. The spiral acrosomal complex consists of an electron-lucent vesicle, lacuna, and an electron-dense acrosomal vesicle. Additionally, the spiral acrosomal vesicle has numerous equidistant striations, and is surrounded by many small granules (20 nm diameter). A long straight nucleus, which is electron-densed, has a deep posterior concavity, the nuclear vacuole. At the terminal end of the nucleus is a sleeve-like structure with a concave posterior nuclear fossa (PNF). The neck is short connecting the PNF. The basal body is located in the PNF and gives rise to the axoneme. This structure connects the head, neck, and tail. The tail is divided into a middle piece and a principal piece. The middle piece, having a 9+9+2 arrangement, is surrounded by a mitochondrial sheath and terminates by an electron-dense fibrous sheath. The principal piece is the longest part of the sperm with coarse fibers tapering posteriorly. The results of this study shall provide some useful information for artificial breeding of this species.  相似文献

A study was conducted to evaluate the effects of meat and bone meal (MBM) and poultry by-product meal (PBM) as the replacement of fish meal in the diets on the growth performance, survival and apparent digestibility coefficients (ADC) of Litopenaeus vannamei. The basal diets were formulated with 22% fish meal and other ingredients which provided about 40% protein and 9% lipid in the diet. The experimental diets included MBM or PBM to replace 0, 20%, 40%, 60% and 80% of total fish meal respectively. All diets were iso-nitrogenous and isocaloric in gross terms. The results showed that there were no significant differences (Pτ;0.05) in growth performance and ADC among the treatments fed with the diets in which 0–60% fish meal had been replaced with MBM, while the percent weight gain (WG, %), body length gain (BLG, %) and ADC significantly decreased when the MBM was up to 80% of the fish meal. There were no significant differences (Pτ;0.05) in growth performance and ADC among all the treatments fed with the diets in which 0–80% fish meal had been replaced with PBM.  相似文献
